KELFULACHI BHAJI
Kelfulachi bhaji also known as bonyechi bhaji is
a traditional Goan delicacy. Banana blossom is known as Kelful in Goan Konkani.
It should be noted that only freshly cut banana flowers are used to prepare the dish.

- 1 Banana blossom/ kelful
- 1 cup tur daal (soak for a couple of hrs, grind coarsely)
- salt to taste
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 1 tsp oil
- 1/2 tsp of coriander powder
- 1 tsp of garam masala
- 2 whole green chillies
- 1/2 cup peas
- 1 pinch of hing/ asafoetida
- 4 tbs grated coconut
- 1 tbs grated jaggery
Instructions
- Kelful has maroon outer coverings called bracts which have to be discarded or can be used to serve the dish.
Inside these bracts there are cream coloured florets. Inside each floret is a thick, hard
and tall filament with a cap-like structure which is called "dovlo" (pistil). This is discarded along with a hard opaque-coloured structure called "dai".

- Wash the cleaned florets with water.
- Take a
bowl and add water to it. Now finely chop the cream flowers and add to the
bowl with water.

- Finely
chop the white part and add to the same bowl which has chopped white
flowers.

- To the same bowl add, white peas and daal. Cover the bowl and let these get soaked overnight. Next morning, drain the water.
- Boil the chopped up florets in water with salt and turmeric for ten/fifteen minutes Drain and keep aside.
- Stir for 3 mins. Add the boiled and drained florets stir for 5 minutes Add salt, coriander powder, chilli powder, grated coconut, jaggery, hing, tur daal, turmeric powder, oil, garam masala, green chillies, peas and cook on medium flame.
- serve hot.
